Beth Doerfler MS, RDN is currently a Clinical Research Dietitian with Division of Gastroenterology at Northwestern Medicine in Chicago, Illinois She has authored co-authored several book chapters and journal articles on diet and lifestyle modification in gastrointestinal related diseases including several on eosinophilic gastrointestinal disease management
Lori Welstead MS ,RD, LDN is a Registered Dietitian with the Section of Gastroenterology, Hepatology and Nutrition at the University of Chicago Medicine. She works with a variety of patients who have gastrointestinal conditions ranging from eosinophilic gastrointestinal diseases, celiac disease, Crohn’s disease, and ulcerative colitis to irritable bowel syndrome, fatty liver disease, and obesity. e. She has authored articles on the various gastrointestinal diseases.
Treatment of eosinophilic gastrointestinal disorders (EGID) is evolving. Our speakers will provide a historical look at medical nutrition therapy for treatment of EGID as well as discuss updated treatment recommendations, including how to organize data on the risk of cross contamination and its influence on outcomes of MNT for EGIDs. They will also discuss the role of the RDN in nutritionally driven, evidence-based treatment options, and review tools to help clients improve lifestyle, diet diversity and ultimately improved quality of life.
